A New Method for Determination of Ethanol Tolerance in Vinification Yeast: Measurement of Glucose-Induced Proton Movements

After optimization of the measurement conditions of glucose-induced proton movements, the correlation between the proton nil-net exchange step and the ethanol concentration at and/or above which growth is no longer allowed was determined for five vinification yeasts. This study introduces a new method for determination of ethanol tolerance.
