Unusual Koshu Grape Skin Anthocyanins

Koki Yokotsuka 1, Nakako Nishino 1, and Vernon L. Singleton 2

Two unusual fumaric acid acylated peonidin-3-monoglucosides were fractionated and purified from the skins of the Koshu grape, native to Japan, as minor anthocyanin pigments. The differentiation of Koshu from Vitis vinifera and American species is discussed. Diglucoside pigments are absent; therefore, Koshu cannot be directly derived from V. labrusca or other American species or V. amurensis. The pigments are, nevertheless, different from those reported for V. vinifera.

Key words: anthocyanins, grape skin, Koshu, Vitis vinifera
