The mono- and diglucoside anthocyanins of a variety of hybrid grapes were separated, identified, and quantified by joint use of high performance liquid chromatography with diode array spectroscopic detection. The order of elution and the spectral properties observed permitted correct identification of 20 compounds. The presence of a shoulder at 440 nm in the visible-ultraviolet spectrum of the monoglucoside derivatives showed that they are different from the diglucosides. Moreover, study of the spectrum in the uv region pointed to the existence of anthocyanins acylated with p-coumaric acid. Identification was confirmed by analysis of the chromatograms recorded at different wavelengths and after performing acid and alkaline hydrolyses.
