Three strains of Leuconostoc oenos were treated with mitomycin C in order to study the lysogeny of this species. Bacteriophages and corresponding cured variants have been isolated from these wild strains. The cured strains infected by their corresponding induced phage produced clear, circular lysis plaques on double-layer agar plates. The highest lytic activity of phage was observed at a pH exceeding 3.6 and when the culture was infected in the late exponential stage of growth. One of the cured strains was attacked by phage liberated from a different strain. These results show that Leuconostoc oenos strains can be lysogenic and may constitute a bacteriophage contamination on an industrial scale.
