Determination of Biogenic Amines and Other Amines in Wine by an Optimized HPLC Method With Polarity Gradient Elution

An optimized method to determine biogenic amines and other amines in wine with pre-column derivatization with o-phthaldialdehyde is reported. Determination of the different amines has been carried out using a polarity gradient elution technique involving methanol and sodium acetate buffer. The method has been optimized in terms of its precision and accuracy assessed by statistical means using formula derived for the purpose of treating determined number sets of data. After validation, the method was applied to determine amines in red, white, and rosé wines of Rioja region.
