Abstract
Several processing treatments were used in conjunction with simulated mechanical harvest and subsequent gondola transport to define problems posed by mechanical harvest and to suggest possible solutions. Holding times prior to the start of winery processing were found to be critical. Of the several treatments, field crushing and stemming was preferred.
