Abstract
Carbonyl compounds of an Albana wine were isolated from the volatile fraction as 2,4-dinitrophenylhydrazones by thin-layer chromatography and identified by gas chromatography-mass spectrometry (GC-MS). Six aldehydes and four ketones were identified. These were methanal, ethanal, propanal, 2-methylpropanal, pentanal, and hexanal; and propanone, butanone, 3-hydroxybutanone, and 2-pentanone.
