Abstract
Lipoxygenase activity in grapes (cv. Macabeo) was evidenced as an increase in absorbance at 234 nm. Lipoxygenase was isolated by ammonium sulfate fractionation, hydrophobic chromatography. Elution of the enzyme from the resin was performed by a linear gradient of (NH4)2SO4 and ethylene glycol. The lipoxygenase activity was higher in partially ripe than in fully ripe grapes.
