Abstract
Grapes of the Vitis vinifera L. varieties Verigo and Mavro were kept at 1° to 2°C for three months, when 4 g of sodium metabisulfite (Na2S2O5) were spread between sheets of greaseproof paper at the bottom of 40 x 30 x 10 cm cartons which were enclosed in plastic bags. Decay was reduced considerably, the berries were turgid, the stems remained green, bleaching of the berries by SO2 was insignificant, and the appearance and taste of the grapes were rated as excellent.
