Once fractional-blending systems become stable, the average age is independent of the number of steps in which the storage capacity is divided. A fractional-blending system and a standard aging system of the same storage capacity produce wine of equal average age. The most uniform blend, as determined by the least value for the maximum per cent of wine from a single vintage, is from a 1-step blending system for wine aged up to 4 years. Wine aged 5 to 20 years will be blended best in a 2-step fractional-blending system. ER -
