SP - 168 LP - 174 DO - 10.5344/ajev.1967.18.4.168 VL - 18 IS - 4 AU - Claudio Peri Y1 - 1967/01/01 UR - http://www.ajevonline.org/content/18/4/168.abstract N2 - The conversion of leucoanthocyanidins into the corresponding anthocyanidins was studied on two purified preparations of leucoanthocyanidins of different degree of polymerization, extracted from grape seeds.Contrary to results of others, the reaction of the conversion seems to be of the second order.During the hot acid treatment a compound derived from catechin having Emax at 4.60 mµ is produced, chiefly from the preparation of less polymerized leucoanthocyanidins. The formation of this compound does not seem much influenced by oxygen, and occurs as a first-order reaction. ER -
