The first phase of the survey, covering grape processing through fermentation, was reported in 1969. The second phase, covering wine processing through bottling and bottle aging, is the subject of this paper.The first paper (1) in this series covered varieties, grape and juice handling, and fermentation. This paper surveys clarification, stabilization, and aging operations in the cellar, and bottling operations and bottle aging.
