Benomyl fungicide was demonstrated to be fungistatic to three strains of Saccharomyces cerevisiae at concentrations ranging from 10 to 200 ng/ml in an agar medium prepared from peach pulp. The three yeast strains differed in sensitivity. Total alcohol production and rate of production were decreased in liquid peach pulp containing as little benomyl as 5 ng/ml. Heating peach juice containing at 30 ng/ml for 10 min at 80°C significantly reduced the growth-retarding effects on the three strains tested. ER -
