In the 1977 and 1978 growing seasons 500 ppm ethephon applied at véraison produced fruit 5 and 18% greater in color than controls. In 1978 ethephon increased must color by 14%. Wine (1977) from 500 ppm ethephon fruit was 60% greater in color after 15 months' bottle aging. Total color of 1978 wines six months old was increased 29 and 47%, respectively, with 250 and 500 ppm treatments. The latter was judged significantly better than other treatments by a taste panel.
