AB A survey of processing practices at 18 wineries, producing varietal table wines in the coastal districts of California, was conducted in 1982. The results of the first phase of this survey, covering grape processing through fermentation, were reported in 1983. The second and final phase of the survey, covering the various processing operations from fermentation through bottling, for white and red table wines, is the subject of this report.
