Strains were also inoculated into a Washington State wine (Merlot) to evaluate their ability to induce MLF. Commercial wine samples were streaked on solidified modified apple Rogosa and Gram (+) cocci colonies in pairs and chains were subcultured and identified as strains of L. oenos. Most strains grew well at pH 3.3, 3.5, and 4.5, in 15 mg/L total SO2 (pH 3.5), and at 25°C and 30°C. None of the strains were able to grow at pH 2.9. Growth was retarded at 30 mg/L SO2 with strains WS-18 and WS-19A inhibited the greatest. Several native strains including WS-6A and WS-22 induced faster MLF in the Merlot wine compared to the commercial strains ML-34 and MCW. ER -
