Carignane) decreased gradually during anaerobic treatment under CO2. Conversely, the ratios: malvidin-3-glucoside/ malvidin-3-glucoside-p-coumarate and caffeoyl tartaric acid/p-coumaroyl tartaric acid esters increased linearly.
