In a PDO context, a typicality assessment can be used to sum up the global quality of a PDO wine. In this study, a two-phase methodological approach to identify the distinctive characteristics of a PDO wine is described and applied to a case study on Chianti Montespertoli DOCG wine where DOCG is the Italian acronym for PDO. Starting with the evaluation by a panel of wine professionals of the typicality of a series of selected PDO wine samples, it was possible to make a PLS (Partial Least Squares) regression model between wine typicality and its chemical data. The model was used to predict wine typicality from the chemical data of experimental wines (2009, 2010, and 2011 vintages) produced from grapes growing in the PDO area. Finally, regression coefficients of the PLS model were analyzed to select which grape chemical parameters were significant in describing the typicality of the wine. These could be considered the main parameters to take into account in order to manage the process and ensure the typicality of this wine.
