Abstract
Dry table wines produced by a pin-mill crusher during three consecutive vintages were evaluated against equivalent roller-crusher wines. With white wines the pin-mill gave higher alcohol, tannin, and color, and lower total acidity. With red wines, the pin-mill gave higher alcohol, tannin, and color. Extensive skin contact, however, could lead to lower color intensity.
