Abstract
1. For general purposes of large industrial, wineries, making all types of wines and grape spirits, Baumé or Balling is not the basis of intake costing. The actual sugar content as determined chemically is the only rational basis for costing.
2. It is standard practice in Australia to automatically sample all must and from this accurately determine the sugar intake.
3. It is also standard practice to sample all juice used for beverage purposes.
4. It is standard practice to accurately determine the actual costs of the various products and measure the efficiency of the operation.
