Abstract
Proline content was measured in some experimental wines made from 16 grape varieties. The values were found to range from 16 to 1000 mg/L. Zinfandel wine recorded the highest value of 1000 mg/L, while the wine from Baily Alicante had the lowest value of 16 mg/L. Varietal effect on proline content was observed. No consistent differences were noted between white and red wines.
