Abstract
A simple gas-liquid chromatographic method based on the analysis of the trimethyl-silyl derivatives is described for determination of inositol and trehalose in wines. The results indicate satisfactory recovery (98-100%) and repeatability with coefficents of variation less than 8% and 16% for inositol and trehalose, respectively. The content of sorbitol, mannitol and inositol in four solera systems and sixteen samples of Spanish sherries have been also determined using an acetylation procedure. Changes in the concentration of the studied compounds during aging do not follow a regular pattern.
