Abstract
The application of hybridoma-derived antibodies to the detection of Brettanomyces contaminants in wine production has increased the sensitivity and speed of detection. Utilizing the antibodies in the enzyme-linked immunosorbent assay (ELISA), 91.5 x 10-12 g of protein can be detected with a Titertek Multiskan MC having an absorbance threshold being the equivalent of 34 cells per mL. A double blind test of direct wine samples proved the sensitivity of the analysis in detecting contaminated wine.
