Abstract

Three Pennsylvania French-American hybrid wines were compared with White Riesling wine using gas chromatography-olfactometry (GCO), a quantitative odor bioassay. Odor data showed that White Riesling was a simple, clean wine dominated by fruity and floral odors, whereas the hybrid wines, while also dominated by fruity and floral odors, contained additional less desirable odors not found in White Riesling. Some of the hybrid wines contained traces of compounds found in native American grapes, but not in large enough amounts to affect the total aroma.
