During fermentation, yeasts release products of their secondary metabolism into the medium. Some of these compounds react with grape-derived anthocyanins to produce more stable pigments. Medina et al. show that the contribution to red wine color of non-Saccharomyces yeasts differs from that of conventional yeasts. See Medina et al., pp.148–156.
