Abstract
Amassing of data over a period of years allows the determination of the pH range at the optimum maturity for any variety of grape in a given area. By harvesting grapes in this pH range in a normal season, optimum maturity will usually be assured. Advantages of picking grapes at their optimum maturity are: maximum tonnage for the grower, maximum juice gallonage and wine quality for the winery.
