YR 1978 UL http://www.ajevonline.org/content/29/4/286.abstract AB Routine analysis of large number of different spirits, by gas-liquid chromatography of their carbon disulfide extracts, has shown that those aged in wood contain, in addition to compounds already identified as derived from the aging process, significant amounts of 1,1'-diethoxypropan-2-one. The latter compound was identified by comparison of its mass spectrum and GC retention time with those of an authentic sample, and was present in higher concentrations than the oak lactones (cis and trans β-methyl-γ-octalactone) in Cognac.
