Canadian wines average 1.84 and range between 0.09 and 6.11 mg histamine per liter of wine. For similar vinifications there was no significant difference between American hybrids, French-American hybrids and vinifera wines. Differences were noted, after amelioration, bentonite fining, and hot pressing.
