The pentane extract of the juice contains the known free terpenes of the fruit whereas Freon extracts more polar polyhydroxylated monoterpenes (polyols). These latter components are now recognized as free terpenes also. The residual monoterpene precursors in the solvent-stripped juice are derivatized as water-soluble conjugated compounds. Acid hydrolysis of the precursor compounds gives, in addition to most of the known volatile terpenoid aroma substances of the grape, the highly reactive polyols.The experiments confirm the presence of only two forms of muscat grape monoterpenoids, a) the free, and b) the conjugated precursor forms.
