Dessert wines from six varieties and madeira-style wines from 11 varieties were organoleptically highly acceptable. Madeirization of dessert wines increased the volatile esters slightly and reduced titratable and volatile acidity. The color and organoleptic quality of madeirized wines were generally better than those of dessert wines. However, madeirization had an adverse effect on sensory qualities of some vaieties with strong aroma. ER -
