Macabeo) was evidenced as an increase in absorbance at 234 nm. Lipoxygenase was isolated by ammonium sulfate fractionation, hydrophobic chromatography. Elution of the enzyme from the resin was performed by a linear gradient of (NH4)2SO4 and ethylene glycol. The lipoxygenase activity was higher in partially ripe than in fully ripe grapes.
