AB The first part of this article summarizes the main results of experiments carried out since 1978 by the study group on oak-aging Burgundy wines. In the second part, we present the new project "Oak Cooperage 2000" which involves the study of 288 sessile and pedunculate oaks selected from nine geographic origins from across France.
