Abstract
The simultaneous quantitation of glycerol, acetic acid and ethanol in grape juice by high performance liquid chromatography (HPLC) has been accomplished in 11 minutes using a Polypore H column (Brownlee Labs, Inc.). This method may provide reliable quantitation of these compounds as indicators for mold, sour rot and "wild" alcoholic fermentation in grapes received at the grape inspection station of wineries.
