Abstract
Histamine in Canadian wines was determined by U.V. absorption of an ortho-phthaldialdehyde derivative using high performance liquid chromatography. Canadian wines average 1.84 and range between 0.09 and 6.11 mg histamine per liter of wine. For similar vinifications there was no significant difference between American hybrids, French-American hybrids and vinifera wines. Differences were noted, after amelioration, bentonite fining, and hot pressing.
